Cauliflower Fried Rice

A low-calorie, low-carb version of traditional fried rice, made with cauliflower rice and loaded with veggies.

Ingredients:

  • 1 cup cauliflower rice
  • 1/2 cup mixed veggies (peas, carrots, corn)
  • 2 eggs, scrambled
  • 1 tbsp soy sauce (low-sodium)
  • 1 tsp sesame oil
  • 1 green onion, chopped

Instructions:

  1. Prepare the Ingredients:
    • If you haven’t already, pulse cauliflower florets in a food processor to make cauliflower rice, or purchase pre-made cauliflower rice.
    • Chop the green onion into small pieces.
    • Beat the eggs in a bowl and set aside.
  2. Cook the Mixed Veggies:
    • Heat a non-stick skillet or wok over medium heat.
    • Add the mixed veggies (peas, carrots, corn) to the pan and cook for 2-3 minutes, stirring occasionally, until they are heated through.
    • Remove the veggies from the skillet and set them aside.
  3. Scramble the Eggs:
    • In the same skillet, add the beaten eggs. Cook over medium heat, stirring frequently, until scrambled and fully cooked (about 2-3 minutes).
    • Remove the scrambled eggs and set aside with the veggies.
  4. Cook the Cauliflower Rice:
    • Add the sesame oil to the skillet and heat over medium-high.
    • Add the cauliflower rice and cook for 4-5 minutes, stirring occasionally, until the cauliflower rice is tender and slightly golden.
  5. Combine All Ingredients:
    • Add the cooked veggies and scrambled eggs back into the skillet with the cauliflower rice.
    • Pour in the soy sauce and stir everything together. Cook for another 2-3 minutes, ensuring everything is well combined and heated through.
  6. Add Green Onion:
    • Sprinkle the chopped green onion on top of the fried rice and give it one last stir.
  7. Serve and Enjoy:
    • Serve the cauliflower fried rice warm.
