Ingredients:
- 1 cup cauliflower rice
- 1/2 cup mixed veggies (peas, carrots, corn)

- Remove the scrambled eggs and set aside with the veggies.
- Cook the Cauliflower Rice:
- Add the sesame oil to the skillet and heat over medium-high.
- Add the cauliflower rice and cook for 4-5 minutes, stirring occasionally, until the cauliflower rice is tender and slightly golden.
- Combine All Ingredients:
- Add the cooked veggies and scrambled eggs back into the skillet with the cauliflower rice.
- Pour in the soy sauce and stir everything together. Cook for another 2-3 minutes, ensuring everything is well combined and heated through.
- Add Green Onion:
- Sprinkle the chopped green onion on top of the fried rice and give it one last stir.
- Serve and Enjoy:
