Ingredients:

  • 1 small sweet potato, cooked and mashed
  • 1/4 cup almond flour
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1/4 cup unsweetened almond milk
  • 1/4 tsp baking powder

Preparation Time: 15 minutes
Calories: Approx. 160 kcal (2 pancakes)

Instructions:

  1. Mash the cooked sweet potato and mix with almond flour, cinnamon, vanilla, almond milk, and baking powder until smooth.
  2. Heat a non-stick pan over medium heat and cook the pancakes for 3-4 minutes on each side, until golden.
