These almond flour pancakes are grain-free and high in protein, providing a satisfying breakfast that won’t spike blood sugar. The rich texture makes them an indulgent yet low-calorie treat.

Ingredients:

  • 1/2 cup almond flour
  • 1 egg (or flax egg for vegan)
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • Pinch of salt

Preparation Time: 10 minutes
Calories: Approx. 180 kcal (2 pancakes)

Instructions:

  1. Whisk together almond flour, egg, almond milk, vanilla, baking powder, and salt until smooth.
  2. Heat a non-stick pan with a little oil and cook the pancakes for 2-3 minutes on each side.
