Cabbage Stir-Fry with Tofu

A low-calorie, high-protein stir-fry with crispy tofu and crunchy cabbage. This dish is light yet filling and full of flavor, perfect for a quick and healthy meal!

Ingredients:
- 1/2 block tofu, cubed
- 2 cups shredded cabbage
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp ginger, minced
Instructions:
- Prepare the Tofu:
- Press the tofu to remove excess moisture by placing it between paper towels or a clean kitchen cloth and pressing down gently.
- Cut the tofu into small cubes.
- Cook the Tofu:
- Heat 1 tsp of sesame oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu to the skillet in a single layer and cook for 5-7 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides.
- Remove the tofu from the skillet and set it aside.
- Sauté the Ginger:
- In the same skillet, add the minced ginger and cook for 1-2 minutes until it becomes fragrant.
- If needed, add a bit more sesame oil to prevent sticking.
- Stir-Fry the Cabbage:
- Add the shredded cabbage to the skillet and stir-fry for 3-4 minutes, allowing the cabbage to soften slightly while still maintaining some crunch.
- Add Soy Sauce:
- Pour the soy sauce over the cabbage and stir to combine. Continue to cook for another 2-3 minutes, allowing the cabbage to absorb the flavor of the soy sauce.
- Combine Tofu and Cabbage:
- Add the cooked tofu back into the skillet with the cabbage. Stir gently to combine, ensuring the tofu and cabbage are coated with the soy sauce and ginger.
- Serve and Enjoy:
- Serve the stir-fry immediately, either on its own or with a side of brown rice or quinoa for a complete meal.
