Grilled Salmon with Asparagus

A simple and nutritious dish, rich in healthy fats and omega-3s, paired with crispy asparagus.

Ingredients:
- 1 salmon fillet
- 1 bunch asparagus
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions:
- Preheat the Grill:
- Preheat your grill or grill pan to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
- Prepare the Asparagus:
- Trim the tough ends of the asparagus by bending each stalk and snapping off the bottom (the woody part).
- Drizzle the asparagus with 1/2 tbsp of olive oil, then sprinkle with salt and pepper to taste. Toss to coat evenly.
- Prepare the Salmon:
- Pat the salmon fillet dry with paper towels.
- Drizzle the salmon with the remaining 1/2 tbsp of olive oil, then season with salt, pepper, and lemon juice.
- Grill the Asparagus:
- Place the asparagus on the grill and cook for 5-7 minutes, turning occasionally, until the asparagus is tender and has nice grill marks.
- Remove the asparagus from the grill and set it aside.
- Grill the Salmon:
- Place the seasoned salmon fillet skin-side down (if it has skin) on the grill.
- Grill for 4-5 minutes per side, depending on the thickness of the fillet, or until the internal temperature of the salmon reaches 145°F (63°C) and the flesh flakes easily with a fork.
- Serve the Dish:
- Plate the grilled salmon fillet alongside the crispy asparagus.
- Optionally, squeeze an additional wedge of lemon over the salmon for extra flavor.
