Ingredients:

  • 1 salmon fillet
  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. Preheat the Grill:
    • Preheat your grill or grill pan to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
  2. Prepare the Asparagus:
    • Trim the tough ends of the asparagus by bending each stalk and snapping off the bottom (the woody part).
    • Drizzle the asparagus with 1/2 tbsp of olive oil, then sprinkle with salt and pepper to taste. Toss to coat evenly.
  3. Prepare the Salmon:
    • Pat the salmon fillet dry with paper towels.
    • Drizzle the salmon with the remaining 1/2 tbsp of olive oil, then season with salt, pepper, and lemon juice.
  4. Grill the Asparagus:
    • Place the asparagus on the grill and cook for 5-7 minutes, turning occasionally, until the asparagus is tender and has nice grill marks.
    • Remove the asparagus from the grill and set it aside.
  5. Grill the Salmon:
    • Place the seasoned salmon fillet skin-side down (if it has skin) on the grill.
    • Grill for 4-5 minutes per side, depending on the thickness of the fillet, or until the internal temperature of the salmon reaches 145°F (63°C) and the flesh flakes easily with a fork.
  6. Serve the Dish:
    • Plate the grilled salmon fillet alongside the crispy asparagus.
    • Optionally, squeeze an additional wedge of lemon over the salmon for extra flavor.
  7. Enjoy:
    • Serve immediately and enjoy this healthy, omega-3-rich meal!
