            Ingredients:

    • 1 slice whole-grain bread
    • 1/2 avocado, mashed
    • 1 egg
    • Salt and pepper to taste
    • Red pepper flakes (optional)

Instructions:

    1. Toast a slice of whole-grain bread.
    2. Mash 1/2 avocado in a small bowl, and season with salt, pepper, and red pepper flakes (optional).
    3. Bring a small pot of water to a simmer and gently crack an egg into the water to poach for 3-4 minutes until the whites are set but the yolk is still runny.
    4. Spread the mashed avocado on the toast, top with the poached egg, and season with more salt and pepper if desired.
