Veggie Stir-Fry

Ingredients:
- 3 oz green beans, trimmed
- Salt, for seasoning
- 1 garlic clove, minced
- 1 tsp olive oil
- 1/4 medium yellow onion, chopped
- 2 medium carrots, cut into julienne strips
- 2 tbsp water
- 3 oz broccoli, cut into florets
- 1/4 cup peas (fresh or frozen)
- 1 tsp reduced sodium soy sauce
- 1 tsp honey
- Black pepper to taste
Instructions:
- Prepare the Green Beans:
- Bring a saucepan of water to a boil and season with a pinch of salt.
- Add the trimmed green beans to the boiling water and cook for 3-4 minutes, or until they are al dente (slightly crunchy).
- Immediately remove the green beans from the pot and strain them. Set them aside.
- Sauté the Aromatics:
- Heat 1 tsp of olive oil in a large skillet over medium heat.
- Add the minced garlic and chopped onion to the skillet and sauté for about 1-2 minutes, stirring constantly, until fragrant and the onion softens.
- Cook the Carrots and Broccoli:
- Add the julienned carrots and broccoli florets to the skillet.
- Pour in 2 tbsp of water and cover the skillet.
- Cook for 6-8 minutes, or until the vegetables are tender but still crisp.
- Add the Green Beans and Peas:
- Uncover the skillet and add the pre-cooked green beans and peas to the skillet. Stir well to combine with the other vegetables.
- Season the Stir-Fry:
- In a small bowl, mix the reduced sodium soy sauce and honey together.
- Pour the soy sauce mixture over the vegetables and stir to coat.
- Add black pepper to taste, and cook for an additional 2-3 minutes until the vegetables are tender but still crisp.
- Serve and Enjoy:
- Remove from heat and serve the veggie stir-fry immediately. Enjoy a light and nutritious dish that’s packed with vibrant flavors and textures!
