Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers
  • 1/2 lb ground turkey
  • 1/2 cup cooked quinoa
  • 1/2 onion, chopped
  • 1/2 cup diced tomatoes
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Bell Peppers:
    • Slice the tops off the bell peppers and remove the seeds and membranes.
    • If needed, trim the bottom slightly to make sure they stand upright. Set them aside.
  3. Cook the Ground Turkey:
    • In a skillet, heat a little olive oil over medium heat.
    • Add the ground turkey to the skillet and cook, breaking it apart with a spoon, for about 5-7 minutes or until browned and fully cooked.
    • Season with salt, pepper, and cumin. Stir to combine.
  4. Sauté the Onion:
    • Add the chopped onion to the skillet with the cooked turkey. Cook for an additional 3-4 minutes until the onion softens and becomes translucent.
  5. Combine the Filling:
    • Stir in the cooked quinoa and diced tomatoes. Continue to cook for another 2-3 minutes, allowing everything to combine and heat through. Taste and adjust seasoning if needed.
  6. Stuff the Peppers:
    • Carefully spoon the turkey, quinoa, and veggie mixture into each of the bell peppers, packing them tightly.
    • Place the stuffed peppers upright in a baking dish.
  7. Bake the Stuffed Peppers:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.
    • For a slightly caramelized top, remove the foil during the last 5-10 minutes of baking.
  8. Serve and Enjoy:
  • Serve the stuffed peppers warm. They make a great standalone meal or pair well with a light salad or side of roasted vegetables.
