Stuffed Bell Peppers

Ingredients:
- 4 bell peppers
- 1/2 lb ground turkey
- 1/2 cup cooked quinoa
- 1/2 onion, chopped
- 1/2 cup diced tomatoes
- 1 tsp cumin
- Salt and pepper to taste
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Bell Peppers:
- Slice the tops off the bell peppers and remove the seeds and membranes.
- If needed, trim the bottom slightly to make sure they stand upright. Set them aside.
- Cook the Ground Turkey:
- In a skillet, heat a little olive oil over medium heat.
- Add the ground turkey to the skillet and cook, breaking it apart with a spoon, for about 5-7 minutes or until browned and fully cooked.
- Season with salt, pepper, and cumin. Stir to combine.
- Sauté the Onion:
- Add the chopped onion to the skillet with the cooked turkey. Cook for an additional 3-4 minutes until the onion softens and becomes translucent.
- Combine the Filling:
- Stir in the cooked quinoa and diced tomatoes. Continue to cook for another 2-3 minutes, allowing everything to combine and heat through. Taste and adjust seasoning if needed.
- Stuff the Peppers:
- Carefully spoon the turkey, quinoa, and veggie mixture into each of the bell peppers, packing them tightly.
- Place the stuffed peppers upright in a baking dish.
- Bake the Stuffed Peppers:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.
- For a slightly caramelized top, remove the foil during the last 5-10 minutes of baking.
- Serve and Enjoy:
- Serve the stuffed peppers warm. They make a great standalone meal or pair well with a light salad or side of roasted vegetables.
