ONE POT CHICKEN AND RICE

Ingredients & Calories:
- Chicken breast, butterflied (6 oz)
- Lettuce, chopped (1 cup)
- Red bell pepper, sliced (1/4 medium)
- Carrots, thinly sliced (1/4 medium)Red cabbage, sliced (1/4 cup)
- Raisins (1 tbsp, optional)
- Corn flour (1 tbsp)
- Breadcrumbs (1 tbsp)
- Egg (1 large)
- Vinaigrette (1 tbsp olive oil, vinegar, honey, Dijon mustard, salt & pepper):
- Sweet chili sauce (1 tbsp)
- Vegetable oil for frying (1 tbsp)
Total Estimated Calories: 560 – 620
Instructions
- Season chicken with oyster sauce,black pepper,paprika,chilli powder,garlic powder,oregano,and oil,
- Massage well to combine
Keep aside or in fridge while you prepare other ingredients
- Pan fry the chicken for 3 minutes on each side
- Remove and set aside
- In the same pan add in onion,tomato,garlic,
- Sautee for 3 to 4 minutes then add in the rice
- Mix well before adding tomato paste,soy sauce and ketchup
- Finally add back in the chicken
- Pour in chicken stock
- Cover and let cook for 25 minutes on medium heat
Keep monitoring the heat reduce when necessary
