Chia Pudding with Mango

A tropical chia pudding made with coconut milk and topped with sweet mango for a refreshing breakfast.

Ingredients:

- 2 tbsp chia seeds
- 1/2 cup unsweetened coconut milk
- 1/4 cup mango chunks
- Stevia or honey to taste
Instructions:

- Mix 2 tbsp chia seeds with 1/2 cup unsweetened coconut milk and 1/2 tsp vanilla extract in a jar or bowl.
- Stir well, cover, and refrigerate overnight.
- In the morning, stir the chia pudding and top with 1/4 cup mango chunks.
- Sweeten with honey or stevia, if desired.
