Chia Pudding with Mango

A tropical chia pudding made with coconut milk and topped with sweet mango for a refreshing breakfast.

Ingredients:

    • 2 tbsp chia seeds
    • 1/2 cup unsweetened coconut milk
    • 1/4 cup mango chunks
    • Stevia or honey to taste

Instructions:

    1. Mix 2 tbsp chia seeds with 1/2 cup unsweetened coconut milk and 1/2 tsp vanilla extract in a jar or bowl.
    2. Stir well, cover, and refrigerate overnight.
    3. In the morning, stir the chia pudding and top with 1/4 cup mango chunks.
    4. Sweeten with honey or stevia, if desired.
