Ingredients:

  • 1/2 block tofu, cubed
  • 2 cups shredded cabbage
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Instructions:

  1. Prepare the Tofu:
    • Press the tofu to remove excess moisture by placing it between paper towels or a clean kitchen cloth and pressing down gently.
    • Cut the tofu into small cubes.
  2. Cook the Tofu:
    • Heat 1 tsp of sesame oil in a large skillet or wok over medium-high heat.
    • Add the cubed tofu to the skillet in a single layer and cook for 5-7 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides.
    • Remove the tofu from the skillet and set it aside.
  3. Sauté the Ginger:
    • In the same skillet, add the minced ginger and cook for 1-2 minutes until it becomes fragrant.
    • If needed, add a bit more sesame oil to prevent sticking.
  4. Stir-Fry the Cabbage:
    • Add the shredded cabbage to the skillet and stir-fry for 3-4 minutes, allowing the cabbage to soften slightly while still maintaining some crunch.
  5. Add Soy Sauce:
    • Pour the soy sauce over the cabbage and stir to combine. Continue to cook for another 2-3 minutes, allowing the cabbage to absorb the flavor of the soy sauce.
  6. Combine Tofu and Cabbage:
    • Add the cooked tofu back into the skillet with the cabbage. Stir gently to combine, ensuring the tofu and cabbage are coated with the soy sauce and ginger.
  7. Serve and Enjoy:
    • Serve the stir-fry immediately, either on its own or with a side of brown rice or quinoa for a complete meal.
